I’ve been working to try to make sure we’re eating more vegetables and fruits, and so this weekend when I went to make a roast beef sandwich (and Eric was making his own), I decided to go all out.
Sure, I could have just thrown together the meat and bread, but I was inspired by some Havarti cheese that I got from the grocery store (which came from a large Midwestern dairy). It reminded me of a gourmet cafe we used to visit that had these amazing sandwiches filled with all kinds of goodness. “Hey,” I thought, “I can just do that right now.” (Mind you, I then made the same sandwich two days later because it was so good the first day.)
The ingredients:
whole wheat bread, lean roast beef, light Miracle Whip, romaine lettuce, matchstick carrots, a tomato from the garden, Havarti cheese
(Note: on the first day I made this, I also added mustard, but forgot about it the second day, when I took these pictures.)
This may not look like the inside of your everyday sandwich, but it is just delicious and a great way to get extra vegetables. As a matter of fact, I think I would enjoy the sandwich even without the roast beef.
After it was finished (look at what a lovely, filling sandwich that is!), I paired it with some honey wheat pretzel sticks from Trader Joe’s. Another great option for a side with this sandwich would be soup, fresh fruit, or cottage cheese. Yum!

It seems like such an obvious thing, but I forget about adding lettuce to my sandwiches at home. Then, when I happen to remember? YUM!!!
I love a good chicken salad or egg salad. Even tuna. But I have been off of mayo for a while so I miss it. I like the idea of adding carrots.
I fell in love with veggie subs during Lent. I finally decided to stop giving Subway my money and make my own. Hoagie roll, cucumber, green bell pepper, avocado, red onion, lettuce, pepper jack cheese and sometimes a little chipotle cheddar dressing. Today I had turkey too.

Oh man, Nicole! While I wouldn’t include every one of those ingredients, overall — it sounds amazing! As in, “I have to have one of those sometime soon.” Yum!
