- 1/2 pound (2 sticks) of butter (not margarine), softened (honestly — I throw it in the microwave until it just almost starts to melt)
- 1 cup of brown sugar, firmly packed
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla (sometimes I do about just under this, but not by much)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 cups Quaker Oatmeal (quick oats only), uncooked
Directions:
1. Preheat oven to 350 degrees.
2. Beat together butter and sugars until creamy.
3. Add eggs and vanilla; beat together well.
4. Add in flour, baking soda, salt, and cinnamon; mix well.
5. Once those are all mixed in, add in the oatmeal and mix well.
6. Drop by tablespoonfuls (or with a cookie scoop) onto ungreased cookie sheet.
7. Bake 10 – 12 minutes or until golden brown.
8. Cool for approximately one minute on the cookie sheet and then move to a wire rack.
9. Enjoy!
