Sorry to be posting this late in the morning. I was going to post last night, but then didn’t have any recipes near me.

Here is my recipe for the week — Cheddar Chicken & Rice Skillet (from Kraft Food & Family Magazine):

Ingredients:

1/2 cup Light Italian Dressing
4 boneless skinless chicken breast halves (1 lb), cut into strips
2 cups Minute brown rice, uncookie
1 1/4 cups fat-free reduced-sodium chicken broth
2 cups small broccoli florets
1 1/2 cups chopped tomatoes
1 cup shredded cheddar cheese
1/2 cup sliced green onions

1. Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 minutes.

2. Stir in rice, broth, and broccoli. Bring to a boil; cover. Reduce heat to low; simmer 5 minutes or until chicken is cooked through and rice is tender. Let stand covered for 5 minutes or until liquid is absorbed.

3. Add tomatoes, cheese, and onions; stir until blended.

Makes 4 servings of 1 1/2 cups each. (Calories per serving 440)
