Tasty Tuesday (One Day Late!)

Things have been so crazy around here that I had forgotten that I instituted “Tasty Tuesday!” Needless to say, not only did I not post a recipe yesterday, Eric and I didn’t even have a formal dinner of any kind. Mostly just these potato skin thingees from Market Day.

Anyway — so here is my recipe for yesterday’s Tasty Tuesday. It is from the book The Freezer Cooking Manual from 30 Day Gourmet. I picked up this book while at the Hearts at Home conference, and have only tried out one recipe so far — but it was a winner! (The book is just $14.95, so if you like this recipe, you might consider taking a look at it! I have had freezer cooking books before, but this has been the most enjoyable.)

Pizza Burgers

Servings: 24 (although I only got 20 out of it, but it could be I put too much filling in some of the hamburger buns)

Ingredients:

Cooked ground beef: 2 1/2 cups (approximately 1 lb uncooked)
Pizza Sauce: 30 oz
Garlic salt: 1/2 teaspoon
Onion salt: 1/2 teaspoon
Oregano: 1/4 teaspoon
Pepperoni, cut into small pieces: 3 oz (I actually skipped the pepperoni and just put in more ground beef)
Shredded mozzarella cheese: 2 cups
Hamburger Buns: 24

Assembly Directions: In a large bowl, mix the ground beef, pizza sauce, garlic salt, onion salt, and oregano. Add the pepperoni pieces and mozzarella cheese, stirring to mix well. Fill buns with meat mixture. Wrap each bun in aluminum foil.

Freezing Directions: Put all of the wrapped buns in a rigid container or 2-gallon freezer bags. Seal, label, and freeze.

Serving Directions: Remove the number of wrapped buns you need from the freezer. Allow them to taw, still wrapped in foil, for no more than one hour. (If they thaw for too long, the buns will get soggy.) Bake the wrapped buns at 350 degrees for 15 – 20 minutes. Serve while hot.

That’s one of my most often used cookbooks. I’ve never tried this recipe though. I’ll have to soon.

Sounds good, but how about reassuring me that 15-20 minutes is enough time to heat the buns/meat throughly. Are these kinda like sloppy joes?

Sorry Arlyn — it actually hasn’t been the case for me that they are done in that amount of time. I always just figured that meant that I wasn’t thawing them enough though.
